Bea's recipe:
Ingredients
250 g plain flour
50 g caster sugar
2 teaspoons baking powder
1/2 teaspoon sodium bicarbonate
1/2 teaspoon salt
3 eggs
500 ml buttermilk
50 g melted butter
To serve
Maple syrup
Preparation method
- Mix all dry ingredients together and stir until well-combined
- Add all wet ingredients and stir until the batter is completely wet, but not over mixed – lumps are okay
- In a non-stick skillet on medium heat, spoon some of the mixture and cook for two minutes on each side
- Serve with maple syrup
